Oatmeal Coconut Cookie Recipe
Description
This cookie recipe starts by creaming together butter, brown sugar, white sugar, eggs, and vanilla extract to create a smooth base. Dry ingredients including flour, baking soda, baking powder, salt, oatmeal, and shredded coconut are mixed separately before combining with the wet ingredients. The dough is portioned by spoonfuls onto greased baking sheets and baked for 8 to 10 minutes. The use of both baking soda and baking powder helps achieve a balanced rise and texture, while the oatmeal and coconut add chewiness and flavor.
Once baked, the cookies will have a golden hue with a soft but sturdy texture, excellent for snack or dessert. The almond extract, if used, adds a hint of almond flavor complementing the coconut. These cookies can be enjoyed fresh or stored for a few days in an airtight container.
