Oatmeal Cookie Bars
Description
Oatmeal Cookie Bars use a combination of melted butter with brown and white sugars to create a rich, sweet foundation, enhanced by eggs and vanilla for moisture and flavor. The dry mix includes flour, cornstarch, baking powder, salt, and optional cinnamon, which adds warmth. Rolled oats provide the bulk and chewiness, while chocolate chips add varying bursts of sweet, melty texture when included. Baking the dough in a greased or parchment-lined 9x9 pan yields a bar with a firm but tender texture, holding together well when sliced.
The bars develop a golden brown crust with slightly chewy edges, contrasting the softer interior filled with bits of chocolate. Cinnamon, if used, adds subtle spice that complements the brown sugar's caramel notes. These bars can be served as a snack, dessert, or portable breakfast option.
Using a glass pan is possible but may increase baking time. The recipe allows for some variation in the amount of cinnamon and choice of chocolate chip types to suit preferences.
