Oatmeal Cranberry Bars
Description
Oatmeal Cranberry Bars feature a hearty mix of rolled oats, flour, and brown sugar that forms a crumbly base and crumble topping. A layer of cranberries is nestled between the layers, providing tartness and moisture. The baking powder helps give a light structure to the oat crust. The baking method involves pressing the oat mixture firmly into a baking dish, spreading the cranberries evenly, then topping with a cinnamon-spiced brown sugar crumble before baking until golden and set.
The texture results in a firm yet tender oat bar with juicy bursts from the cranberries surrounded by a crispy caramelized topping. This recipe yields enough bars for sharing or snacks throughout the week.
These bars can be stored at room temperature for a couple of days or refrigerated for longer freshness. Using gluten-free flour and oats is a straightforward substitution to make the recipe gluten free without sacrificing its essential texture and flavor.
