Oatmeal Muffins

A healthy-ish breakfast recipe, these Oatmeal Muffins are filling and flavorful and perfect for breakfast on the go.

Ingredients

  • 1 cup old fashioned oats
  • 1/2 cup milk
  • 1 cup unsweetened applesauce
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 tablespoons butter melted
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon sugar

Instructions

  1. Combine the oats and the milk in a small bowl. Let it sit for an hour.
  2. Heat the oven to 400ºF.
  3. Prepare a 12-cup muffin pan by spraying with nonstick cooking spray.
  4. In a large bowl, combine the applesauce, egg and vanilla extract. Stir in the oat mixture.
  5. Add the melted butter and stir to combine.
  6. Add the flour, brown sugar, baking powder, cinnamon, baking soda and salt. Stir just until combined.
  7. Divide the mixture evenly between 12 cups, about 2/3 full.
  8. Sprinkle the 1 teaspoon of sugar over the tops of the the muffins.
  9. Bake until the muffins are cooked through and a toothpick inserted in the top comes out clean, about 14 minutes.
