These Oatmeal Raisin Bars have a simple crumb crust and are filled with a creamy raisin mixture. If you love oatmeal raisin cookies, you’ll love these delicious bars!

Ingredients
Filling
- 1 cup sugar
- 2 tablespoons plus 1 1/2 teaspoons cornstarch
- 1 teaspoon ground cinnamon
- 1 1/2 cups sour cream
- 3 eggs lightly beaten
- 2 cups raisins
Bars
- 1 3/4 cups all-purpose flour
- 1 3/4 cups old fashioned oats
- 1 cup packed brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup cold butter cut into cubes
Instructions
Make the filling:
- In a large saucepan, combine the sugar, cornstarch and cinnamon. Stir in the sour cream and cook over medium-high heat until it starts to bubble, stirring often. When it starts to bubble, turn down the heat and cook for 2 more minutes, stirring as it cooks.
- Remove from the heat, and while whisking the eggs, add a small amount of the hot mixture to the eggs.
- Stir the egg mixture back into the saucepan and return the heat. Bring to a boil, and cook an additional 2 minutes, stirring the whole time. (I like to switch between a whisk and a spatula to make sure I’m keeping lumps out, while also making sure none sticks to the bottom of the saucepan and burns.)
- Remove from the heat and stir in the raisins. Let the mixture sit, without stirring, until room temperature.
Make the crumb:
- In a large bowl, combine the flour, oats, sugar, baking soda, and salt. Use a pastry cutter to cut in the butter until it resembles coarse crumbs.
To assemble:
- Preheat the oven to 350ºF. Grease a 9x13-inch baking pan.
- Press 3 1/2 cups of the crumb mixture into the bottom of the prepared pan.
- Gently spread the raisin mixture over the crust.
- Sprinkle the remaining crumb mixture over the top of the raisin filling.
- Bake the bars for 25-30 minutes, or until browned and set. Let cool completely before cutting into bars
