A chewy, soft, and easy to make cookie skillet that will satisfy all of your oatmeal raisin cookie needs!

Ingredients
- 8 Tbsp. unsalted butter (1 stick), softened
- 1/2 cup granulated sugar
- 1/2 cup coconut sugar (or brown sugar)
- 2 large eggs, room temperature
- 1 1/2 tsp. vanilla extract
- 1 1/2 cups All-Purpose Flour (or whole wheat flour)
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1/2 tsp. salt
- 2 1/2 cups quick rolled oats
- 1 cup raisins
- 1 cup chocolate chips (plus a little more to sprinkle on top)
Instructions
- Preheat oven to 350° F and spray your cast iron with non stick baking spray. (Be sure to clean your cast iron thoroughly before baking).
- In a stand mixer cream the softened butter and sugars until mixed. Then add in the eggs and vanilla extract and mix again.
- In a separate bowl mix the flour, baking soda, spices and salt and then add this into the wet ingredients. Then fold in the quick oats, raisins and chocolate chips just until incorporated.
- Press this mixture into the cast iron and top with additional chocolate chips if desired. (Will be thick). Bake for 20 minutes, or until an inserted toothpick comes out clean and the top is lightly browned.
- Let sit for 10 minutes before digging in (if you can wait!!). Enjoy!
