Oatmeal Raisin Chocolate Chip Cookie Skillet
Description
Oatmeal Raisin Chocolate Chip Cookie Skillet brings together traditional ingredients like butter, sugar, eggs, oats, raisins, and chocolate chips into a single pan dessert. The recipe uses both granulated and coconut (or brown) sugar, enhancing sweetness and moisture. Baked in a cast iron skillet, the cookie develops a golden, slightly crisp surface while maintaining a soft and chewy inside. The inclusion of warming spices such as cinnamon and nutmeg adds depth to the flavor profile, complementing the sweetness of raisins and chocolate.
This skillet cookie is baked until a toothpick comes out clean, signaling the right doneness, and is recommended to rest for ten minutes before serving to firm up. It’s perfect served warm alongside vanilla bean ice cream, which balances the baked flavors with creamy coldness.
The hands-off baking method requires minimal mixing, folding the oats, raisins, and chocolate chips gently into the dough before pressing it into the skillet. This recipe offers a cozy and indulgent dessert option with straightforward preparation.
