Obložené Chlebíčky (Czech Open Faced Sandwiches)
Description
This recipe for Obložené Chlebíčky is built on a base of vlašský salát, a potato salad with diced potatoes, peas, ham, mayonnaise, and pickle brine, seasoned and chilled to meld flavors. The potatoes are boiled until tender and peeled, peas blanched, and ham finely chopped before combining. This creamy salad spreads thickly on thinly sliced baguette pieces cut on the bias.
Variants include toppings such as sliced hard-boiled eggs and pickles for the vlašský salát version; salami with cheese, eggs, and cucumber; ham with grated egg, cherry tomatoes, and pickles; and smoked salmon with cream cheese, cucumber, capers, and chives. Each version balances textures and flavors, from creamy and tangy to savory and fresh.
Served on a platter, these sandwiches are suitable for parties or gatherings where guests can choose from multiple types. Preparing the salad and slicing ingredients ahead helps assembly. Covering the platter prevents drying before serving.

Notes
- Preparation time depends on how many sandwich varieties you make; making all 4 will take substantially longer than one.
- Nutritional info is based on the vlašský salát sandwich but varies by type.
- A baguette provides 20 to 30 slices depending on slice thickness and angle.
- Frozen peas taste better than canned; use drained canned peas if preferred for vlašský salát.
- Ask the deli to slice ham about 1/8-inch thick for better texture when chopped.
- Arrange sandwiches on a platter and cover with plastic wrap if preparing ahead to keep moist; unwrap before serving.
