Ingredients

  • 1 large cucumber
  • 1 teaspoon salt
  • 1 tablespoon gochugaru (Korean red pepper flakes)
  • 1 tablespoon shallot chopped
  • ½ teaspoon garlic minced
  • 1 teaspoon white vinegar
  • ½ teaspoon caster sugar
  • 1 teaspoon sesame seeds
  • 1 teaspoon sesame oil

Instructions

  1. Thinly slice the cucumber (¼ inch / 6 mm thick).
  2. Gently mix with salt and set aside for about 15 minutes.
  3. Drain off excess liquid and mix well with all the other ingredients.
