Oil Free Air Fryer Chickpeas [Five Flavours!]

These oil-free air fryer chickpeas are seasoned with one of five distinct flavor profiles including smoky spicy, chili lime, sweet cinnamon, Italian, and ranch. The chickpeas are cooked crispy in the air fryer without added oil by using aquafaba and reserved canning liquid to help the spices stick. This method produces crunchy, seasoned chickpea snacks using simple pantry ingredients and an easy air frying technique.

Description

Starting with canned chickpeas drained but not rinsed to preserve the aquafaba, these chickpeas are spread in the air fryer basket and cooked at 400°F for 10 minutes, stirring halfway for even crisping. A seasoning blend mixed with reserved aquafaba is poured over halfway through cooking to coat the chickpeas, followed by an additional 5-7 minutes of air frying to deepen the crispiness. Different seasoning mixes offer a variety of flavors from smoky paprika to sweet cinnamon and herbaceous Italian or ranch profiles.

The result is crunchy, flavor-infused chickpeas with no added oil, suitable as a snack or salad topping. Handling the chickpeas with the aquafaba helps the spices stick without excess moisture. Mixing frequently during the final air frying prevents burning and ensures even coating.

For storage, keep the chickpeas at room temperature in a paper bag to maintain crispness; refrigeration or airtight containers cause moisture buildup and loss of crunch. The recipe notes emphasize using no salt added chickpeas to control sodium and warn against rinsing to avoid peeling skins that may burn.

Smoky Spicy

  • 1 teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt sea salt
  • ¼ teaspoon cayenne pepper optional

Chili Lime

  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • ½ teaspoon paprika

  • ½ teaspoon salt sea salt

Ranch

  • ½ teaspoon parsley dried
  • ½ teaspoon dried dill weed
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt sea salt
  • teaspoon black pepper

Instructions

  1. Drain your chickpeas over a bowl, so you can reserve a tablespoon of the aquafaba, and do NOT rinse them.
  2. Place the drained (but not rinsed) chickpeas in your fryer basket in a single layer. Air fry at 400 degrees F for 10 minutes, mixing at the halfway point.
  3. Meanwhile, combine the tablespoon of aquafaba (and lime juice for the chili lime option) with HALF of your seasonings for your flavour of choice. Then open the fryer (once cooked for 10 mins) and evenly pour the mixture over the chickpeas and mix well to evenly coat. Continue air frying for another 5-7 minutes, until desired crispiness is reached. Make sure to mix them every few minutes, to prevent burning.
  4. Immediately transfer your air fried chickpeas to a bowl and sprinkle with the remaining seasoning while they're still hot. Mix well and enjoy.
