Description
The recipe starts by cooking diced onion in vegetable broth until softened without oil, adding minced garlic and a mix of chili powder, smoked paprika, and cumin for flavor. Pinto beans and more vegetable broth are added and simmered until most of the liquid has evaporated.
The beans are then mashed with a potato masher to achieve a creamy, yet slightly chunky texture. Fresh cilantro and lime juice are folded in for herbal and citrus notes that brighten the dish. The flavor balance depends on the saltiness of the broth used, which can be adjusted at the end.
This preparation offers a healthier twist on traditional refried beans without oil, suitable for burritos, tacos, fajitas, or as a side. The beans can be stored covered in the refrigerator for several days or frozen for longer preservation.
Ingredients
- 4 tablespoons vegetable broth
- ½ cup white onion diced
- 2-3 cloves garlic minced
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- ½ teaspoon cumin
- 3 cups pinto beans cooked or canned
- ¾ cup vegetable broth
- 2 tablespoons cilantro fresh
- 1-2 tablespoons lime juice
Instructions
- Add the four tablespoons of broth to a large skillet with the diced onion. Sauté until soft, approx. 4-5 minutes, adding more broth or water, if needed to prevent sticking.
- Then add the garlic and the spices, mix well and cook another 30 seconds.
- Next, add the pinto beans and the remaining ¾ cup of broth to the pan and simmer for 5 minutes, until the liquid is mostly reduced. Turn off the heat and use a potato masher to mash most of the beans.
- Now add the cilantro, and lime juice, and mix well. Taste for salt and add if needed. (This will depend on the saltiness of your broth.)
- Use in dishes like burritos, tacos, fajitas, and more!
Notes
- Use a flavorful, salty broth for best results; adjust salt at the end if using low-sodium broth.
- For a smoother texture, mash longer or blend the beans fully if preferred.
- Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 6 months.
