Okra Stew

Okra Stew combines tender beef tips with frozen baby okra, fresh tomato, aromatic garlic, onion, cilantro, and a blend of spices including 7 spice seasoning and lemon juice. The stew simmers to develop a thick, flavorful sauce with a balance of acidity, earthiness, and subtle heat, served traditionally over aromatic Arabic rice pilaf.

Description

Okra Stew features seared beef cooked alongside garlic, cilantro, and onions to build a rich flavor base. Frozen baby okra is incorporated and cooked to soften, releasing its characteristic texture and thickening properties. The addition of lemon juice, 7 spice seasoning, salt, and pepper enhances the stew's bright and warm flavor profile. Tomato paste and fresh chopped tomato add depth and a slight acidity, while water helps simmer the ingredients into a cohesive sauce.

The finishing simmer allows flavors to meld and the sauce to thicken, creating a hearty consistency. The dish is served over traditional Arabic rice pilaf, which balances the stew’s bold flavors. A garnish of fresh cilantro adds a herbal freshness to the presentation.

Leftover stew stores well in the refrigerator for a few days and also freezes for longer storage. This makes it a practical dish for batch cooking. The ingredients and seasoning provide a distinctive Middle Eastern influence without requiring complex steps.

Ingredients

Servings
  • 1 pound beef tips
  • 4 tablespoons olive oil divided
  • 3 garlic minced, cloves
  • ¼ cup cilantro chopped, fresh
  • 1 onion finely chopped, small
  • 2 (14-ounce) packages okra frozen, baby
  • 1 lemon juiced
  • 2 teaspoons 7 spice seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 ounces tomato paste
  • Roma tomato chopped
  • 4 cups water

Instructions

  1. In a heavy bottomed saute pan over medium-high heat, heat 1 tablespoon olive oil, add the beef and cook for 4-5 minutes without touching. Flip over and cook for an additional 4-5 minutes. Set the beef aside
  2. In the same pan, add the remaining olive oil along with the garlic, cilantro and onions and cook until soft and fragrant, about 2 minutes.
  3. Add the frozen okra, lemon juice, salt, pepper and 7 Spice to the garlic cilantro mixture and stir well, coating the okra with the mixture and breaking up the frozen okra. Cook the okra, stirring occasionally until the okra is fully cooked, about 10 minutes.
  4. Add the tomato paste, fresh cut tomatoes and water to the pan. Then return the beef, and mix to incorporate everything together. Lower heat to low and simmer covered for 15 minutes until sauce thickens.
  5. Serve over traditional Arabic rice pilaf and sprinkle fresh cilantro for garnish.
