Old-Fashioned Chocolate Eclair Cake

Old-Fashioned Chocolate Eclair Cake is a layered dessert made of vanilla pudding mixed with whipped topping, set between layers of graham crackers, and topped with chocolate frosting. After chilling for an extended period, the crackers soften into cake-like layers, resulting in a rich texture with creamy vanilla and chocolate flavors that emulate the classic eclair pastry in a simple, no-bake form.

Description

This Old-Fashioned Chocolate Eclair Cake uses instant vanilla pudding combined with milk and whipped topping to create a smooth, creamy filling. Layers of graham crackers alternate with the pudding mixture, softening as the dessert chills. The final layer is covered with softened chocolate frosting that adds a chocolatey richness on top.

The layered assembly and refrigerated setting allow the graham crackers to absorb moisture from the pudding, forming tender, cake-like textures without actual baking. The dessert delivers a balance of creamy vanilla pudding and sweet chocolate topping, mirroring the taste profile of a chocolate eclair in an easy tray cake format. Chilling time enhances the firmness and melds the flavors.

This cake is suited as a make-ahead dessert, good for gatherings where refrigeration is available. The recipe scales well for a 9×13 pan.
