The Old Fashioned Peach Cobbler uses fresh peeled, pitted, and sliced peaches cooked with vanilla and sugar until tender, forming a juicy fruit base. For the Peach Cobbler:

  • 9 peeled pitted and sliced fresh peaches
  • ½ cup water
  • 2 teaspoons vanilla
  • 3 cups sugar
  • 1 cup blueberries fresh
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt coarse
  • 2 cups milk whole
  • 1 unsalted butter stick, melted
  • ¼ cup almond flour (optional)
  • 1 Whipped Cream recipe

Instructions

  1. Preheat the oven to 350°.
  2. Add the sliced fresh peaches, water, vanilla, and 1 cup of sugar to a large saucepot and cook over medium heat for 7 to 9 minutes or until the peaches are soft. Stir occasionally to ensure the ingredients are mixed in. Set aside.
  3. In a large bowl mix together the flour, baking powder, salt, milk, and remaining 2 cups of sugar just until combined, do not over-mix.
  4. Pour the melted butter into the bottom of a 13x9 casserole dish or divide between two 8” cast iron skillets. Strain the peaches and add them to the pan/s but reserve ½ cup of the liquid to pour over the top later.
  5. Next, add in the blueberries and then pour the batter right on top of the fruit. Optionally sprinkle on the almond meal and then bake at 350° for 35-40 minutes or until it is browned on top and cooked throughout.
  6. While the peach cobbler is baking, make the whipped cream.
  7. Serve the peach cobbler with vanilla ice cream, leftover cooked-down fresh peaches, extra fresh blueberries, whipped cream, mint garnish, and some more almond meal. 

Notes

  • This cobbler can be made up to one day ahead, served cold or reheated before eating.
  • Store leftovers covered in the refrigerator for up to five days or freeze covered for up to two months.
  • Reheat covered in a 350°F oven for 10 to 12 minutes or microwave portions until warm.
  • Any suitable baking dish such as a 9x9 or 13x9 can be used for baking.
  • Almond meal topping is optional and adds a nutty flavor when sprinkled before baking.
  • All-purpose flour can be substituted with self-rising flour if preferred.
