Olive Garden San Remo Seafood Dip

The Olive Garden San Remo Seafood Dip combines canned tiny shrimp and crab meat in a creamy sauce made from cream cheese, olive oil, flour, cheeses, horseradish, and reserved seafood liquid. This mixture simmers to a warm pudding-like consistency, layered over drained marinara sauce in a dish, topped with parmesan, and baked briefly to serve as a creamy, cheesy, seafood appetizer.

Description

This San Remo Seafood Dip starts by creating a rich sauce with olive oil and flour, incorporating the reserved liquid from canned shrimp and crab to carry their flavor. Cubed cream cheese and seasonings including crushed garlic, salt, and prepared horseradish are added and stirred to smoothness before folding in asiago and parmesan cheeses, which melt into the sauce. The seafood is then blended in, and the mixture simmers until heated through and pudding-like.

The dipping sauce is layered over marinara sauce, which has been drained to reduce excess liquid, in a shallow baking dish. Freshly shredded parmesan cheese tops the assembled dip before baking at 325°F for 10 to 15 minutes just to warm through without browning.

This creamy dip is suitable for serving warm as an appetizer alongside bread or crackers. It offers a combination of creamy texture with savory seafood and subtle horseradish heat, balanced by the tangy marinara base.

Ingredients

Servings
  • 6 ounces Shrimp tiny, canned; drain and reserve liquid
  • 6 ounces crab meat canned; drain and reserve liquid
  • 2 ounces cream cheese room temperature and cubed
  • 2 tablespoons olive oil
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon garlic crushed
  • 1 teaspoon horseradish prepared
  • 1/3 cup Asiago cheese grated
  • 2 tablespoons Parmesan Cheese grated
  • 1/2-3/4 cup half and half
  • 5 /2 marinara sauce prepared; by Barilla brand; drained to remove excess liquid
  • 1/4 cup Parmesan Cheese fresh, finely shredded, for topping

Instructions

  1. In a 2-quart saucepan on medium-low, heat olive oil and blend in flour. Add to flour the liquids that were reserve from the shrimp and crab; stir well. To this sauce, add cubed cream cheese, salt, crushed garlic, and horseradish; stir until smooth.
  2. Add asiago and Parmesan cheeses and stir until smooth. When the cheese has melted and sauce is smooth, add shrimp and crab; blend well. Simmer until heated through. Finally, add half and half a little at a time until the seafood sauce starts to simmer and begins to resemble warm pudding. Let sauce simmer for 12-15 minutes.
  3.  Stir sauce so it does not scorch on bottom. Spray a shallow 9-inch baking dish with nonstick spray. Add drained marinara sauce and carefully spoon seafood sauce on top. Sprinkle with freshly shredded Parmesan cheese and place in a preheated oven at 325 degrees, for 10-15 minutes, until heated through. Dip should not brown on top.
