One Bowl Soft Chocolate Chip Cookies
Description
This recipe uses room temperature butter and egg combined with brown sugar and a touch of hot water and vanilla to form the dough without needing to cream separately. The inclusion of mini dark chocolate chips adds bursts of chocolate throughout the cookie. Baking yields cookies that are golden and soft, with a moist center and lightly crisp edges. Cooling on the baking sheet briefly helps them set before transferring to a rack and serving.
The cookies store well at room temperature in airtight containers for several days, making them good for make-ahead treats or sharing. They also freeze well both baked and as dough balls, which can be baked directly from frozen with slight additional baking time.
Ingredients
- ½ cup butter room temperature
- ¾ cup brown sugar lightly packed
- 1 large egg room temperature
- 1 tablespoon water hot
- ½ teaspoon vanilla
- 1½ cups all-purpose flour at least 11% protein
- ¼ teaspoon baking soda
- 1 pinch salt
- ½ cup dark chocolate chips mini
*If you use unsalted butter then add ¼ teaspoon of salt.
Instructions
- Pre-heat oven to 350F/180C. Line a cookie sheet with parchment paper.
- In a large bowl beat together all the ingredients except the chocolate chips. Once combined then stir in the chocolate chips. Drop by spoonfuls on the prepared baking sheet. Bake for approximately 15 minutes or until golden.
- Let cool on the pan 5 minutes then move to a wire rack to cool completely. Enjoy!
Notes
- Store cooled cookies in an airtight container at room temperature for up to 5-6 days.
- Freeze baked cookies in bags or containers for up to 3 months.
- Freeze unbaked cookie dough drops on parchment until firm, then transfer to a freezer bag; bake from frozen with a few extra minutes in the oven.
