Description

This recipe uses just one ingredient: sweetened condensed milk, either regular or low fat. The can is placed (unopened) in a casserole dish or pie plate, covered with foil, and then set inside a larger pan filled with water reaching about three-quarters up the side of the can. Baking at 425°F for 60 to 90 minutes cooks the condensed milk slowly, allowing Maillard reactions and caramelization to develop its golden brown color and characteristic flavor.

The caramel should be cooled completely before opening the can to avoid burns and to allow it to thicken. If a thin crust forms on top after baking, it can be stirred back into the caramel with an immersion blender to achieve a smooth texture. This homemade caramel can be used for dipping fruit, drizzling over desserts, or in recipes that call for caramel sauce.

  5. Cool completely.
