  • 1 tablespoon olive oil
  • 1/2 onion chopped finely, small
  • 3-4 cloves garlic minced
  • 1 diced tomatoes with juices, 14 fluid ounce can
  • 1/4 cup vodka
  • 2 Italian seasoning dashes
  • 1 cup half-and-half
  • 1 pound potato gnocchi uncooked
  • 1/2 cup Parmesan Cheese freshly grated
  • basil sliced thinly, handful, fresh
  • salt to taste
  • black pepper to taste

Instructions

  1. Add the olive oil and onion into a deep skillet over medium-high heat and sauté for 5-7 minutes (ok if the onion lightly browns).
  2. Add the garlic to the pan and cook for about 30 seconds. 
  3. Add the tomatoes and vodka and let it simmer for about a minute. 
  4. Stir in the Italian seasoning, half-and-half, and gnocchi. Give it a good stir, then reduce the heat to medium. Cover the pan and cook for 5 minutes.
  5. Stir in the parmesan and basil. Season with salt & pepper as needed (I was fairly generous with the salt in this recipe) and cook for a couple more minutes to ensure the gnocchi is fully cooked through. Serve immediately.

Notes

  • The gnocchi cooks fully in the sauce, so pre-cooking is unnecessary.
