Ingredients
- 1/2 /2 lb Italian sausage (hot or mild)
- 1/2 /2 cup yellow onion diced
- 2 cloves garlic minced
- 2 chicken broth low-sodium, in cups
- 1 ½ cups heavy cream
- 2 ½ cups broccoli florets small
- 2 cups small pasta uncooked
- 1/2 /2 cup sun-dried tomatoes chopped
- 1/2 /2 cup Parmesan Cheese grated
- basil for garnish
Instructions
- In a large skillet, brown the sausage over medium-high heat and onion until sausage is no longer pink. Add garlic and cook for 30 seconds. Using a slotted spoon, remove meat mixture to a plate. Drain, leaving 1 tablespoon of fat in the pan.
- Add the chicken broth, cream, broccoli, pasta. and sun-dried tomatoes to the pan. Bring to a boil, reduce heat to a simmer and cover with a lid.
- Cook for 7-9 minutes at a low simmer, stirring intermittently but replacing the lid quickly. Cook until pasta is done. You may need to add more liquid and cook longer if your pasta is not tender. If you like your broccoli more on the crisp side add it later and not when you add the pasta.
- Add the meat mixture back to the pan and stir. Add Parmesan cheese and salt and pepper to taste. Garnish with basil.
