Description
The cooking starts by seasoning chicken breasts and placing them atop butter spread over the bottom of a baking dish. A mixture of chicken stock, heavy cream, diced sweet onion, minced garlic, garlic powder, salt, black pepper, dried thyme, and some of the grated Parmesan is poured over the chicken and rice in an uncooked state. Ingredients
- 2 lbs chicken breast boneless skinless
- 4 tablespoons butter cut into small pieces, unsalted
- 2 cups chicken stock
- 1 cup basmati rice uncooked
- 1 cup heavy cream
- ½ onion finely diced, small sweet yellow
- 1 cup Parmesan Cheese divided, 1 Tablespoon freshly grated
- 3 teaspoons garlic minced
- 2 teaspoons garlic powder
- 1 teaspoon salt plus more to season chicken
- 1 teaspoon black pepper plus more to season chicken, ground
- ½ teaspoon thyme dried
- parsley optional, fresh, for garnish
Instructions
- Preheat oven to 350° F.
- Add butter to bottom of 9x13 inch baking dish.
- Season both sides of chicken breasts with salt and pepper. Place in baking dish.
- In a large mixing bowl, stir together chicken stock, rice, heavy cream, diced onion, 1 Tablespoon grated Parmesan, minced garlic, garlic powder, salt, black pepper, and thyme.
- Pour over chicken.
- Cover dish with foil and bake for 40 minutes.
- Uncover and sprinkle with remaining 1 cup Parmesan cheese.
- Continue baking, uncovered, for 20-30 minutes or until cheese is melted and chicken reaches 165° F.
- Top with fresh chopped parsley if desired. Serve immediately.
