One Pot Chicken and Shrimp Gumbo

A one pot gumbo full of shrimp, chicken, sausage and vegetables that's ready in 30 minutes.

Ingredients

  • 3 tablespoons vegetable oil
  • 1/3 cup all-purpose flour
  • 2 bell pepper ribs and seeds removed, chopped, red
  • 1 onion finely chopped, medium
  • 2 cloves garlic minced
  • 1 teaspoon oregano dried
  • 1 tablespoon tomato paste
  • 4 cups chicken broth
  • 1 tablespoon hot sauce optional
  • salt coarse salt and ground pepper
  • black pepper coarse salt and ground pepper
  • 1 10 ounce okra frozen sliced, package of
  • 8 ounces smoked sausage cut into 1/2 inch thick slices, pre-cooked, such as andouille or kielbasa
  • 4 cups chicken shredded
  • 1/2 pound Shrimp large

Instructions

  1. In a large Dutch oven or heavy-bottomed pot, heat the oil over medium.
  2. Add flour, and cook, whisking constantly, until pale golden, 5 to 7 minutes.
  3. Stir in bell peppers, onion, garlic, and oregano; season with salt and pepper to taste.
  4. Cook, stirring occasionally, until vegetables have started to soften, 5 to 7 minutes.
  5. Add the chicken broth, tomato paste and hot sauce if using.
  6. Stir in the okra, chicken and sausage. Bring to a boil, then turn heat down to medium. Stir in the shrimp and cook for 2 to 3 minutes or until shrimp are pink and cooked through. Season with salt and pepper to taste and serve.

Notes

  • Make Ahead: The vegetables can be prepared a day in advance.
