Soup
- 1 Tablespoon extra virgin olive oil
- 1 lb lean ground beef
- 1 cup sweet onion chopped
- 3 cloves garlic minced
- 1 24 ounce jar marinara
- 6 cups chicken broth
- 1 14 oz can crushed tomato
- 2 Tablespoons Italian seasoning blend
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 12 lasagna noodles
Topping
- 1 cup ricotta cheese
- ½ cup Parmesan Cheese
- ½ cup mozzarella cheese
- 1 Tablespoon fresh parsley

Instructions
- In a large dutch oven, heat oil over medium heat.
- Add ground beef and onion and cook until beef is cooked through and onion is tender and transparent.
- Add the garlic and cook for one additional minute or until fragrant.
- Drain off the fat and return the mixture to the dutch oven along with the marinara, chicken broth, crushed tomatoes, Italian seasoning, salt and pepper.
- Simmer, covered, for 25 minutes.
- Meanwhile, cook the lasagna noodles to al dente doneness according to package directions. Drain and cut into bite sized pieces. When the soup is finished, stir the noodles into the soup base.
- In a small bowl, prepare the topping by mixing together the ricotta, parmesan, mozzarella and parsley until well combined.
- When ready to serve, distribute the topping over the soup in the dutch oven, or spoon over individual serving bowls.
Notes
- Stir the ground meat frequently while browning to ensure it cooks evenly without burning and breaks up nicely.
- Drain the excess fat from the meat after browning so the soup doesn't end up too greasy. Simply pour it into a colander and let it drain off.
- Taste and adjust the seasoning as you go until it's just the way you want it.
- Don't overcook your lasagna noodles. They will cook a bit more when you add them to the soup.
