Ingredients

Servings
  • 1 tablespoon olive oil
  • 1 lb. boneless skinless chicken breasts, diced into bite-sized pieces
  • 1 tablespoon garlic I like to use a bottle of pre-minced fresh garlic from the produce section for a shortcut, minced
  • 1 bell pepper diced (any color is fine, medium; sweet
  • 1 cup broccoli florets small
  • 1 Knorr Rice Sides Creamy Chicken flavor or any other similar flavor of choice; 5.7 ounce package
  • 2 cups water
  • 1 tablespoon butter
  • ¼ cup Parmesan Cheese grated
  • 3 tablespoons basil divided, chopped, fresh leaves

Instructions

  1. Heat oil in a large nonstick skillet or Dutch oven over medium-high heat. Add chicken pieces to the hot skillet and cook, stirring frequently, until browned (about 5-7 minutes). The chicken doesn’t need to be entirely cooked through, since it will continue cooking in the skillet. You just want a bit of nice color on the outside.
  2. Add the garlic to the skillet and cook for 30 seconds, stirring constantly.
  3. Add the diced yellow bell pepper, broccoli, rice packet, water, and butter to the pot. Bring to a boil, reduce heat, and cover.
  4. Simmer over low heat (covered) for 7 minutes, or until rice is tender and most of the water is absorbed.
  5. Stir in Parmesan and 2 tablespoons basil. Garnish with remaining basil.

Notes

  • This recipe yields 4 relatively small servings or 2 large servings. If you're cooking for heartier appetites, I would suggest doubling the ingredients.
