One Pot Orzo with Shrimp & Peas

This one pot orzo recipe, with shrimp and peas, is the ultimate comfort meal and comes together in just 25 minutes.

Ingredients

  • 2 teaspoons paprika
  • 1 teaspoon oregano dried
  • ½ teaspoon thyme dried
  • ½ teaspoon salt fine sea salt
  • ½ teaspoon black pepper ground
  • cayenne pepper dash of
  • 2 cups whole wheat orzo
  • 1 ¼ cups vegetable broth low sodium
  • ¼ cup white wine dry
  • 5 green onions sliced
  • 3 cloves garlic minced
  • 1 cup peas frozen
  • 2 tablespoons butter cubed, unsalted
  • 12 ounces Shrimp peeled & deveined, large
  • lemon zest and juice of 1
  • salt to taste
  • black pepper to taste

Instructions

  1. In a small bowl, stir together paprika, oregano, thyme, salt, pepper and cayenne.
  2. Bring a large pot of water to a boil and salt it generously. Cook orzo according to package directions, draining it when it is still a little al dente. Set aside.
  3. Combine the vegetable broth and white wine in the same pot (I used a large saucepan).
  4. Add the spice mix and bring to a boil. Add the greens onions, garlic and peas. Return to a rapid boil. Drop in the butter cubes and stir until the butter is melted.
  5. Carefully add the shrimp and cook for 2 minutes, or until shrimp turn pink.
  6. Add the cooked orzo, and the lemon zest and juice. Stir for a minute or two until the pasta absorbs all the flavorful liquid. Serve immediately.
