Ingredients

  • 2 tbsp olive oil divided
  • 3 chicken breast diced
  • salt to taste
  • black pepper to taste
  • 1 onion diced
  • 5 mushrooms sliced
  • 4 cloves garlic minced
  • 4 cups chicken stock
  • 2 cups orzo
  • Parmesan Cheese approximately 1 cup, handful

Instructions

  1. Add 1 tablespoon of olive oil to a pan over medium heat. Add in the chicken, seasoned with salt and pepper, and cook for 5 minutes or until the chicken has cooked through. Set aside.
  2. Add in another tablespoon of olive oil and sauté the onions for 2 minutes before adding in the garlic and sautéing for 1 minute. Then add in the mushrooms and continue to cook for another 1 minute.
  3. Add in orzo to the pan and stock. Cover and cook for 7 to 10 minutes or until the orzo is fully cooked and the liquid has been absorbed.
  4. Stir in a handful of parmesan cheese and the cooked chicken until everything is fully combined.
