One Pot Pizza Pasta
Description
One Pot Pizza Pasta integrates spicy Italian sausage browned with diced bell peppers, onions, garlic, and pepperoni slices to build a flavorful base. Adding pasta sauce seasoned with Italian herbs along with water creates a sauce in which the dry pasta cooks, absorbing the flavors and becoming tender. The one-pot approach simplifies the process while allowing the ingredients to meld.
After simmering until the pasta is al dente, shredded mozzarella and sliced black olives are stirred in to add creaminess and a salty bite. Fresh parsley or basil can be sprinkled on top for a fresh herbal note. The result is a satisfying dish reminiscent of pizza flavors served as a pasta meal.
This pasta is best served immediately to enjoy the melted cheese at its best and the tender bite of pasta and vegetables. Adjust seasoning with salt and pepper to taste before serving.
Ingredients
- 1 teaspoon olive oil optional
- 1 pound spicy Italian sausage bulk or removed from casings
- 1/4 cup red bell pepper diced
- 1/4 cup green bell pepper diced
- 1/4 cup onion chopped
- 4 garlic cloves, minced
- 4 ounces pepperoni sliced, save a few pieces whole for garnish
- 24 ounces pasta sauce jarred, marinara, meat or sausage flavor works best
- 1 teaspoon Italian seasoning
- 1 teaspoon oregano dried
- 3 cups water
- 1 pound short pasta dry, uncooked, like rotini or penne
- salt to taste
- black pepper to taste
- 1 1/2 cups mozzarella cheese shredded
- 1/4 cup black olive sliced
- parsley or basil, chopped fresh, for garnish
Instructions
- Heat a Dutch oven or large pot over medium high heat. Add the oil (if needed) and when heated add the sausage and brown, crumbling the sausage as it cooks for about 4 minutes or until cooked through. Drain any extra fat, if needed.
- Add the red and green bell peppers and onions and cook for an additional 3-4 minutes, stirring frequently. Add the garlic and pepperoni and cook for an extra minute.
- Stir in the pasta sauce, Italian seasoning and oregano. Add the water and season lightly with salt and ground black pepper. Stir and bring to a boil.
- When the water is boiling, add the pasta, stir and reduce the heat to low. Cover and simmer for about 12 to 15 minutes or until the pasta is tender, stirring a few times through the cooking process.
- Remove from the heat and stir in the mozzarella cheese. Add the olives and mix to combine. Taste and season with salt and ground black pepper, if needed.
- Serve immediately garnished with fresh parsley or basil (optional)
