One Pot Sausage Pasta
Description
This recipe begins by browning Italian sausage pieces to render their fat and build flavor. Onions and garlic are added and softened to create a savory base. Diced tomatoes and tomato sauce introduce acidity and body, while dried basil and oregano bring herbaceous notes. Uncooked pasta and vegetable broth are added to the pot, allowing the pasta to cook directly in the flavored liquid, which reduces to create a thick sauce that coats the pasta and sausage evenly. Seasoning with salt and pepper finishes the dish.
Once cooked, the pasta is served hot with a sprinkle of grated Parmesan cheese, adding a salty, creamy contrast to the robust sauce and sausage. The dish can accommodate any small pasta shape and is adaptable with added vegetables as desired.
Leftovers store well in the refrigerator for up to five days and can be reheated in a pan or microwave. The recipe also freezes well for up to two months; thawed before reheating for best texture.
Ingredients
- 1 pound Italian sausage mild or spicy, cut into ½ inch pieces
- 1 large onion chopped
- 4 cloves garlic minced
- 14.5 ounces diced tomatoes 1 can
- 8 ounces tomato sauce
- 12 ounces pasta such as penne or fusilli, uncooked
- 4 cups vegetable broth
- 1 teaspoon basil dried
- 1 teaspoon oregano dried
- salt to taste
- black pepper to taste
- ½ cup Parmesan Cheese grated, for serving
Instructions
- In a large pot or Dutch oven, cook the sausage over medium-high heat until browned, about 5 minutes.
- Add the onion and garlic and cook until softened, about 3-4 minutes.
- Add the diced tomatoes, tomato sauce, pasta, broth, basil, oregano, salt, and pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to medium-low and cover the pot.
- Simmer the pasta for about 15-20 minutes, or until the pasta is cooked through and the sauce has thickened. You may have to stir occasionally to make sure the pasta doesn't stick to the pot.
- Serve the pasta hot, garnished with grated Parmesan cheese, if desired.
Notes
- Use Italian or spicy sausage for stronger flavor, or turkey sausage as a lighter alternative.
- Small-shaped pasta works best; cooking time may vary by pasta shape and brand.
- Optional additional vegetables like bell peppers, spinach, or zucchini can be added to increase nutritional value.
- Store leftovers in an airtight container refrigerated for up to 5 days and reheat on stovetop or microwave.
- This dish freezes well for up to 2 months; thaw overnight in the refrigerator prior to reheating gently in a pan.
