Ingredients

  • 1 pieces chicken cut up into 8 (you can mix and match the ones you like, whole
  • 1 Cup long grain rice
  • 1 red pepper sliced into trips
  • 1 onion chopped, large
  • 1 Clove garlic chopped
  • 1/2 Cup olive chopped, pitted
  • 1 Tablespoon olive oil
  • 1/4 Teaspoon saffron crushed
  • 1 Cup water
  • 1 Cup chicken stock
  • salt to taste
  • black pepper to taste
  • parsley to garnish (optional, chopped

Instructions

  1. Heat olive oil in a large pan over medium high heat
  2. Season chicken on both sides with salt and pepper
  3. Place chicken in the pan and brown on both sides. About 5 minutes per side
  4. Remove chicken from pan and place aside
  5. Discard the excess oil in the pan leaving just 1 tablespoon of fat
  6. Toss the onion, pepper and garlic in the same pan. Add salt and cook for 2-3 minutes or until they soften
  7. Add the olives and cook 1 more minute
  8. Add the rice and mix with a wooden spoon so the rice gets coated with the veggies
  9. Pour in the water and chicken stock. Add the saffron and stir. Cook until liquid starts boiling
  10. Add the chicken back in the pan on top of the rice
  11. Cover pan with a lid and reduce the heat to low
  12. Cook for 25 minutes more or until chicken is cooked through and rice is fluffy
  13. Sprinkle parsley and enjoy!
