One Pot Turkey Stroganoff (Lightened-Up)

This One Pot Turkey Stroganoff is a lightened-up version of the classic dish. It's packed with hearty ground turkey, creamy mushrooms, and tender pasta. This great weeknight meal comes together so easily, only takes 30 minutes and is a guaranteed family favorite.

Ingredients

  • 1 Tbsp unsalted butter (14g)
  • 3 cloves garlic minced
  • 8 oz. sliced bella mushrooms
  • 1 medium yellow onion (200g) diced
  • 1 lb. 93% lean ground turkey
  • 2 cups chicken broth (480g)
  • 1 cup 2% milk (240g) I used Fairlife
  • 8 oz. uncooked wide egg noodles
  • 1/2 cup greek yogurt (112g) or sour cream
  • Grated parmesan & chopped parsley optional for garnishing

Instructions

  1. Heat butter in a dutch oven or large pot over medium heat. Add the garlic, stirring for a minute until fragrant, then add the mushrooms and onions. Cook until they start to soften, about 4-5 minutes.
  2. Add the ground turkey and season with salt and pepper to taste (I added 1/2 tsp of each). Cook until no longer pink, about another 5 minutes.
  3. Add the broth, milk and egg noodles and bring to a boil. Once boiling, reduce heat to a simmer. Cook, stirring occasionally, until the pasta is tender, about 8-10 minutes.
  4. Remove from heat and allow to cool some before adding the greek yogurt. During this time, more of the liquid will evaporate. Stir in the greek yogurt then taste and add any additional salt and pepper to taste.
  5. Top with grated parmesan cheese and chopped parsley to serve, if desired, and enjoy!

Notes

  • *Be sure to not overcook the pasta as you want to make sure it doesn’t get mushy in the dish. Cook egg noodles until just tender and the liquid has evaporated. This will ensure that your noodles stay in tact and also don’t overcook while reheating.
  • Store leftover turkey stroganoff in an airtight container in the fridge for 3-4 days. I seriously love this recipe even more the next day as the flavors have had more time to soak into the noodles and turkey overnight in the fridge. 
  • I like to reheat in a small saucepan on stovetop over medium-low heat. You can also reheat in the microwave.
