  • 1 tablespoon butter
  • 1 pork tenderloin about 1 pound, Smithfield Roasted Garlic & Cracked Black Pepper Marinated Fresh
  • 1 sweet onion diced
  • 2 cloves garlic minced
  • 8 ounces campanelle pasta
  • 14.5 ounces diced tomatoes canned
  • 1 3/4 cup water
  • 1/3 cup milk
  • 1 teaspoon red chili flakes
  • 1 cup cheddar cheese grated
  • parsley for garnish
  • salt to taste
  • black pepper to taste

Instructions

  1. Heat a large skillet over medium heat. Add butter to the skillet and let melt.
  2. Dice the pork into bite sized pieces and add to the skillet. Cook, stirring occasionally, for 7 minutes.
  3. Add the onion to the skillet and cook for 3 more minutes, stirring occasionally.
  4. Add the garlic to the skillet and stir to combine.
  5. Dump in the pasta, tomatoes, water, milk, and red pepper flakes. Stir to combine and bring to a boil.
  6. Cover and cook for 8 minutes.
  7. Remove lid and continue cooking for 5 more minutes.
  8. Reduce heat to low and stir in the cheddar. Let cook 2 more minutes.
  9. Remove from heat and garnish with parsley and season with salt and pepper as desired.
