  • 1 1 large Yukon Gold potato peeled and sliced into 1/4 inch rounds
  • 1 1 large red onion
  • 8 8 eggs
  • 3/4 3/4 cup parmigiano reggiano freshly grated
  • 4 4 tablespoons extra virgin olive oil
  • 1 1 teaspoon salt
  • 1 1 teaspoon freshly ground black pepper
  • 1 1 teaspoon fresh thyme

Instructions

  1. Preheat oven to 375º.
  2. Whisk together eggs, salt, pepper and freshly grated Parmigiano-Reggiano.
  3. Peel the potato and slice into 1/4 inch rounds.
  4. Place the cut potato into boiling salted water and blanch for 3 minutes, drain and transfer to a bowl of ice water.
  5. Slice the onion into thin slices.
  6. Add 2 tablespoons of oil to a heavy, oven-proof 12-inch skillet that is 2 inches deep. Heat oil over medium heat.
  7. Add the sliced onion to the skillet and cook until soft, and caramelized.
  8. Transfer to a bowl and set aside.
  9. Drain potatoes and pat them dry.
  10. Layer potatoes in the skillet overlapping them and cook over low heat for 1 minute.
  11. Add the caramelized onions evenly on top of the sliced potatoes.
  12. Pour the egg mixture over the potatoes and onions.
  13. Sprinkle 1/2 teaspoon of thyme and reserve the other half for garnish.
  14. Cook over low heat until the eggs are almost set, about 5 minutes.
  15. Transfer to the oven and cook for 15 to 20 minutes or until golden and firm.
  16. Put a serving plate on top of the skillet and flip so the frittata released from the pan and onto the plate.
  17. Let it rest for 5 minutes, garnish with the remaining thyme, then slice and serve.
