Description

The preparation involves heating milk until just simmering, then blending sugar, cornstarch, and egg yolks with orange zest, orange juice, and vanilla extract. The hot milk is gradually whisked into the egg mixture to temper it, then the combined mixture is cooked over medium heat while whisking until thickened to a pudding-like consistency.

The butter is whisked in last for smoothness and flavor before chilling. The custard is covered with plastic wrap pressed directly on the surface to prevent a skin from forming and refrigerated for at least four hours.

Once chilled, the custard offers a smooth, rich texture with bright citrus notes from the orange juice and zest, making a refreshing yet indulgent dessert suitable as a stand-alone treat or paired with fruit or pastry.

Ingredients

  • 4 cups milk whole
  • 1 cup granulated sugar white
  • 1/2 cup cornstarch
  • 8 egg yolk
  • 1 tablespoon orange zest
  • 1/3 cup orange juice fresh
  • 2 teaspoons vanilla extract or 1 vanilla bean
  • 4 tablespoons butter unsalted

Instructions

  1. Heat milk in medium saucepan until hot, and it just starts to simmer, but don't let it boil.
  2. While milk is heating, add sugar and cornstarch to mixing bowl and whisk to combine.
  3. Using an electric mixer whisk egg yolks into the sugar mixture until pale yellow.
  4. Whisk in orange zest, orange juice and vanilla.
  5. Remove the milk from heat, and with the mixer on low speed, little by little, whisk the milk into egg mixture.
  6. Pour mixture back into sauce pan and place over medium heat, whisk continuously for 5 minutes, until custard has thickened to the consistency of thick pudding.
  7. Remove from heat and whisk in butter.
  8. Pour the orange custard into a large bowl and cover it with plastic wrap, pressing plastic wrap on top of the custard to prevent skin from form
  9. Chill for at least 4 hours before serving.
