Orange Jelly Candy

Orange Jelly Candy is a sweet treat made by cooking a mixture of orange juice, sugar, and agar agar until thickened and then chilled to set. The rolling boil and constant stirring create a firm jelly that can be cut and rolled into neat logs, sometimes enhanced with orange or yellow food coloring and powdered sugar for added visual appeal. This candy captures bright citrus flavors with a chewy texture ideal for snacking.

Description

This Orange Jelly Candy recipe uses fresh or sour orange juice combined with sugar and agar agar powder to form a gel once cooked and cooled. The mixture is boiled until thick, poured into a lined pan, and chilled until set. The jelly is then cut into sections, rolled into logs, and optionally dusted with powdered sugar to prevent sticking and create a decorative swirl effect. The agar agar provides a firm, springy texture, differing from gelatin by being plant-based and stable at room temperature.

The candy balances the tartness of the orange juice with sweetness, making for a refreshing chew that can be served as a homemade confection or packaged as gifts. The recipe allows customization by adjusting sweetness or adding color to enhance the presentation.

The preparation requires careful stirring during boiling to ensure the agar dissolves fully and the mixture thickens properly. After setting and cutting, storing in an airtight container is advised to maintain freshness and prevent drying.

Ingredients

Servings
  • 1 cup orange juice preferably freshly squeezed, sour
  • 1 cup sugar
  • 1/4 oz agar agar this is 7 grams
  • 2 tablespoons powdered sugar for sprinkling - optional
  • Food Coloring optional, orange or yellow

Instructions

  1. In a large saucepan combine sugar, orange juice, and agar agar powder. Stir well and if needed add a few drops of food coloring.
  2. Now, stir the mixture CONSTANTLY and cook on medium-high heat until it comes to a rolling boil. Then lower the heat to medium-low and continue to until the boiling mixture is thick, for about 4-5 minutes.
  3. After that, pour the mixture into a 10x10-inch rimmed pan lined with parchment paper. Distribute the mixture evenly in the pan and chill for two hours in the fridge.
  4. Then, cover about 1/2 inch at one of the edges with parchment paper and sprinkle powdered sugar on top of the rest. This will create this white swirl effect.
  5. After that, dip a sharp knife in warm water and use it to loosen the jelly around the edges and cut it in two blocks, by running the knife across the middle.
  6. Next, roll each piece tightly into a log, careful not to get any powdered sugar on the end where the paper was, or it will not stick at the end. Use the end to stick the roll together tightly.
  7. Finally, cut the orange candy roll into 1/2-inch pieces and serve.
