Orange Pineapple Cake
Description
The cake batter includes eggs, a choice of lemon or yellow cake mix, neutral cooking oil, and whole mandarin oranges (with juice) mixed together and baked in a large flat pan. Choosing a lemon cake mix enhances the citrus notes complemented by the mandarin oranges and pineapple.
The frosting combines instant vanilla pudding mix, crushed pineapple with juice, and whipped topping, whipped until combined for a light, creamy texture. It is then spread over the cooled cake and refrigerated until serving. The assembled cake is topped with additional slices of mandarin oranges or other fruit right before serving.
Texture-wise, the cake is moist with a tender crumb, while the frosting adds a creamy, fruity layer with sweetness balanced by the citrus fruits. The refreshing tang of oranges and pineapple complements the vanilla pudding foundation, keeping the dessert light rather than heavy.
Doneness of the cake is checked when its top is lightly browned and a toothpick comes out clean. The recipe yields a large amount of frosting, so it is customary to spread it thickly for a generous finish. Chilled storage is ideal to maintain the frosting’s texture and freshness until served.
