Delicious orange salad dressing is quick and easy. Fresh, bright citrus flavours with a mild sweetness to complement mild garden greens and tender vegetables as well as peppery greens like nasturtium, watercress and arugula. Top your salad with some delicious tangy goat cheese to make it a meal! This will dress salad for approximately 6-8 servings.

Ingredients
- 4 tablespoon orange juice, freshly squeezed
- 2 teaspoon lemon juice, freshly squeezed
- 2 teaspoon red wine vinegar
- 2 teaspoon honey
- 4 tablespoon olive oil
- ¼ teaspoon each, salt and pepper
- *Optional: ½ teaspoon chopped fresh Thyme or Parsley
Instructions
- Mix orange juice, lemon juice, vinegar and honey together honey is fully incorporated.
- Whisk in olive oil, salt and pepper and herbs if using until blended and season with additional salt and pepper if desired.
- Toss with 8 cups of seasonal greens and fresh vegetables sliced thinly. Alternatively, sprinkle this over individual composed salads.
- Store any leftover dressing in a covered container in the fridge for up to one week.
