Ingredients
- 1 pound orecchiette pasta or other short pasta
- ½ cup water reserved pasta water
- 2 teaspoons olive oil
- ½ large yellow onion diced
- 1 pound Italian sausage removed from casings, sweet
- ½ cup red peppers fire roasted
- 2 cups arugula fresh
- 6 basil torn by hand, leaves
- ⅓ cup Parmesan Cheese grated

- In a large pot of boiling salted water, cook pasta until al dente, according to package instructions. Drain, reserving 1/2 cup pasta water.
- Transfer sausage mixture to bowl (or keep in pan and add following ingredients to pan); add pasta, reserved pasta water, and Parmesan. Toss to combine. Serve hot!
