  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • 1 ½ teaspoons baking powder
  • ½ cup sugar
  • ¼ cup cocoa powder plus 2 tablespoons
  • ½ cup milk whole
  • 3 tablespoons vegetable oil
  • 1 cup Oreo cookie plus more for topping, crushed
  • 1 cup brown sugar packed
  • 1 ¾ cups coffee hot
  • vanilla ice cream for serving

Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a bowl, whisk together the flour, salt, baking powder, sugar and 2 tablespoons of cocoa. Stir in the milk and oil. Pour into a 9-inch pie plate, baking dish or skillet. Sprinkle on the oreos. Combine the brown sugar and remaining cocoa and sprinkle over batter. Pour hot coffee on top - do not stir the mixture.
  3. Bake for 40 to 45 minutes.
  4. Remove and let it sit for about 15 minutes so it can set. Top with vanilla ice cream and more crushed oreos.
