Orzo Pasta

This tasty lemon basil orzo pasta salad is an easy summer dish - perfect for taking to your next cookout.

Ingredients

  • 1 pound orzo pasta
  • 1 lemon medium
  • 1 cup basil fresh leaves
  • 1/3 cup olive oil
  • 4 garlic cloves
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper ground

Instructions

  1. Cook orzo according to package directions.
  2. While the pasta cooks, begin to make the dressing.
  3. Juice and zest the lemon.
  4. In a blender or food processor, combine basil, lemon juice, lemon zest, olive oil, garlic, salt and pepper.
  5. Blend until smooth.
  6. When orzo is done, drain, but do not rinse.
  7. Put the pasta in a serving dish and pour basil mixture on top immediately while orzo is hot.
  8. Toss to coat.
  9. Serve warm or cold.

Notes

  • Add grated Parmesan cheese or grape tomatoes to the salad if you like.
