Our Turkish Rice Recipe
Description
This traditional Turkish rice starts by gently heating butter and toasting orzo (şehriye or vermicelli) until it changes color, developing a nutty aroma. Adding rice to the pan and stirring over low heat helps coat the grains in butter and blend flavors. Hot water or stock is then added, causing the mixture to sizzle and bubble as it is brought to a rolling boil.
Once boiling, the heat is lowered, and the pot is partially covered to allow the rice to simmer gently until the liquid is absorbed. After removing from heat, the rice is left covered for a few minutes to steam, resulting in tender grains separated by the toasted orzo.
This rice is commonly served as a side dish and pairs well with meat, poultry, or vegetable mains. Using the same measuring cup for rice and water is important for consistent results. For a variation, olive or vegetable oil can replace butter, which alters flavor but provides a lighter option.
Ingredients
- 1 cup rice (we use a standard tea/coffee mug)
- 2 tablespoons orzo (or şehriye or vermicelli)
- 1 tablespoon butter
- 2 cups water use same-sized cup you used to measure the rice, hot, or stock
Instructions
- Heat your butter in a deep saucepan over a low to medium heat.
- Now add your şehriye (orzo) to the pan and stir around for a few minutes until you see it start to change colour.
- As soon as you notice the orzo start to go brown, add your rice and continue to stir. Remember to keep the pan over a low heat and keep stirring, otherwise your rice and orzo will burn.
- After 3-4 minutes, add the water or stock.
- There will be a big sizzle and the liquid will bubble up. Turn up the heat and bring the rice to the boil, fully.
- Once the rice is boiling, give it a couple of stirs around, put a lid on the pan, leaving a small gap, and reduce the heat to medium-low.
- Leave your rice to simmer for 8-10 minutes until the water or stock has absorbed.
- Now remove from the heat, put the lid firmly on the pan and leave the rice to stand for 5 minutes.
- After 5 minutes, remove the lid and fork through your rice.
Notes
- Using the same sized cup for rice and water ensures correct liquid ratio for fluffy rice.
- Butter adds traditional flavor, but substituting olive or vegetable oil is a lighter alternative.
- Toasting orzo before adding rice contributes a nutty flavor and golden color.
- Calorie counts are based on using butter and water; substituting stock slightly changes nutrition.
