Oven Baked BBQ Chicken - with quick homemade barbecue sauce

Oven Baked BBQ Chicken uses bone-in, skin-on chicken thighs baked in a homemade barbecue sauce made from ketchup, apple cider vinegar, Worcestershire sauce, brown sugar, mustard powder, and spices. The chicken is baked, turned and basted with the sauce multiple times, then finished under the broiler for a caramelized glaze. The result is tender, flavorful chicken with a sticky coating, complemented by fresh parsley garnish.

Description

This Oven Baked BBQ Chicken recipe starts with a sauce combining ketchup (or tomato sauce), apple cider vinegar, Worcestershire, brown sugar, mustard powder, onion powder, salt, black pepper, and water. The sauce ingredients combine into a flavorful base that coats the chicken and caramelizes during baking. Bone-in, skin-on chicken thighs provide juicy meat and crispy skin contrast after the baking process.

Chicken pieces are placed skin side down in the sauce-filled baking dish, baked initially, then turned and basted with more sauce halfway through cooking. After approximately 50 minutes total baking, excess fat is skimmed off if desired. A brief broil finishes the dish, thickening the sauce and crisping the chicken skin without overcooking. This method yields a sticky, savory, and slightly sweet barbecue flavor with tender meat.

Serving suggestions include classic Southern sides like cornbread, coleslaw, potato salad, steamed corn, or fresh leafy salads. The recipe notes flexibility in substituting sauce ingredients such as vinegar types and ketchup brands. It also notes that boneless chicken requires adjusted cooking times and that glass or ceramic bakeware aids cleanup.

Ingredients

Servings

Sauce (Note 1)

  • 1 cup ketchup or Australian/UK tomato sauce
  • 1/4 cup apple cider vinegar
  • 2 tsp Worcestershire sauce
  • 4 tbsp brown sugar
  • 2 tsp mustard powder
  • 2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper fresh
  • 1 cup water

Chicken

  • 1.5 kg / 3 lb chicken thigh Note 2, bone in skin on, or drumstick or wing
  • parsley for garnish, fresh, or chives, or finely chopped green onions

Instructions

  1. Preheat oven to 200°C/390°F.
  2. Sauce: Mix all Sauce ingredients in a ceramic/glass baking dish (Note 3), then mix in water.
  3. Add chicken and turn to coat. Place chicken skin side down.
  4. Bake for 20 minutes. Remove from oven, turn chicken, spoon over Sauce.
  5. Bake for a further 30 minutes, then remove and spoon over Sauce.
  6. Skim off fat (optional): Tilt pan and spoon or drain off excess fat.
  7. Broil/grill - Change to broiler/grill on high. Spoon sauce over chicken generously, then place under grill / broiler for 2 to 3 minutes to caramelise the chicken and the sauce to thicken more. Do not walk away - this can happen quickly!
  8. Serve chicken, garnished with parsley or green onions, if using. Pictured in post with Mashed Potato and Green Bean Salad (minus feta).

Classic Side Dishes for BBQ Chicken

  1. Cornbread, Coleslaw, Potato Salad (or try this no mayo Lemon Potato Salad), Southern Baked Beans, big leafy salad with classic Vinaigrette, steamed corn with butter, bread rolls, creamy mashed potato (or Creamy Cauliflower Mash for low carb emergency!), or Potato & Gravy.

Notes

  • Use bone-in, skin-on chicken thighs, drumsticks, or wings for best moisture and flavor; boneless or breast pieces require shorter cooking and different technique.
  • Substitute ketchup with Australian or UK tomato sauce for regional flavor variation.
  • Apple cider vinegar can be replaced with white wine, sherry, champagne vinegar, or in smaller amounts regular white vinegar.
  • Onion powder can be swapped with garlic powder or freshly minced garlic clove.
  • Mix the sauce without water when using substitutes to maintain thickness.
  • For boneless chicken, coat with sauce and bake differently as noted in the recipe references.
  • Use glass or ceramic baking dishes to simplify cleaning; metal pans may need covering with foil and parchment.
  • Adjust sauce thickness by adding water to thin or baking to thicken as needed, depending on pan size and chicken juice release.
