  • 300 g chicken breast cut into chunks
  • 1 tablespoon chilli powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • 1 pinch salt sea salt
  • 1 pinch black pepper ground
  • 1 pinch sugar
  • 1 tablespoon olive oil
  • 3 bell pepper thinly sliced
  • 1 red onion thinly sliced
  • 4 tortilla wraps
  • 1 lime
  • 10 g cilantro fresh

To serve (all optional):

  • salsa
  • guacamole
  • sour cream
  • tortilla chips

Instructions

  1. Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
  2. Make the seasoning by mixing together 1 tablespoon Chilli powder, 1 tablespoon Smoked paprika, 1 teaspoon Garlic powder, 1 teaspoon Onion powder, 1 teaspoon Cumin, 1 teaspoon Ground coriander, 1 pinch Sea salt, 1 pinch Ground black pepper and 1 pinch Sugar.
  3. Put 300 g Chicken breast into a large bowl with 1 tablespoon Olive oil, 3 Bell peppers, 1 Red onion and the seasoning. Mix well. Put in the fridge for at least two hours, but preferably overnight.
  4. Add the chicken and vegetables to a large oven-proof pan.
  5. Put into the oven for 25-30 minutes, until the chicken is cooked through.
  6. Once cooked, squeeze the juice of 1 Lime over the cooked dish and sprinkle with 10 g Fresh coriander (cilantro).
  7. Divide the mixture between 4 Tortilla wraps and serve with Salsa, Guacamole, Sour cream and Tortilla chips

  • Substitute chicken with tofu, king prawns, halloumi, steak strips, or extra vegetables as preferred.
  • Use hands to thoroughly coat chicken and vegetables with oil and seasoning for even flavor.
