Oven Baked Pork Loin Back Ribs

Oven Baked Pork Loin Back Ribs are prepared by seasoning 3 pounds of baby back ribs with a spice rub including garlic powder, paprika, salt, black pepper, and cumin. The ribs are slow-cooked at 300°F for 3 hours until tender, then coated with a homemade BBQ sauce featuring garlic, Worcestershire sauce, olive oil, and salt, and baked further to set the sauce. Removing the membrane improves both tenderness and flavor penetration.

Description

This recipe for Oven Baked Pork Loin Back Ribs starts with a well-seasoned spice rub combining garlic powder, paprika, salt, black pepper, and cumin. Removing the membrane from the ribs allows better flavor absorption and results in a more tender texture. The ribs are baked low and slow covered with foil to retain moisture and reach an internal temperature of 185°F, ensuring tenderness.

After the initial baking phase, the ribs are brushed generously with a BBQ sauce made from garlic, Worcestershire sauce, olive oil, and salt, then returned to the oven uncovered to caramelize and set the sauce, adding a rich glaze and enhanced flavor.

These ribs can be served as a hearty main dish with typical accompaniments like coleslaw or baked beans. The slow baking technique yields meat that’s tender but firm, with a flavorful crust from the spice rub and BBQ sauce layer.

For optimal results, removing the membrane is recommended as it can remain tough after cooking and limit seasoning penetration. This step can be done by hand or requested from your butcher. Cooking times may vary depending on oven performance; consider using a meat thermometer for precision.

Ingredients

Servings

For the Ribs & Spice Rub

  • 3 pounds baby back ribs
  • 1 tablespoon garlic powder
  • 2 teaspoons paprika
  • 2 teaspoons salt
  • 1 teaspoon black pepper ground
  • 1/2 teaspoon cumin

For the BBQ Sauce

  • 2 cups BBQ sauce
  • 2 tablespoons garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 300°F, placing the oven rack in the middle position. Line a baking sheet with parchment and set aside.
  2. Remove the membrane from the underside of the ribs. Using a sharp paring knife, separate it at the edge of the rack. Then grip the flap tightly with a piece of paper towel (or kitchen towel) and tear it off. Repeat for any remaining sections.
  3. Make the spice rub by combining garlic powder, paprika, salt, pepper, and cumin.
  4. Rub the ribs all over with the spice rub. Then place them meat-side up on the prepared baking sheet. Cover the baking sheet tightly with aluminum foil.
  5. Bake for 3 hours or until the internal temperature reaches 185 deg F.
  6. Remove from the oven and discard the foil.
  7. In a medium bowl, mix all the BBQ sauce ingredients.
  8. Brush the ribs all over with BBQ sauce. Return to the oven to bake for 30 minutes more or until the sauce has set.

Notes

  • Removing the membrane from ribs improves tenderness and allows better spice rub penetration.
  • You can ask your butcher to remove the membrane if preferred to simplify prep.
  • Use a meat thermometer to confirm the ribs reach an internal temperature of 185°F for optimal doneness.
