Oven-Roasted Beets with Honey Ricotta
Description
This recipe starts by peeling and cubing golden and purple beets, then coating them evenly with olive oil and salt before roasting at 375°F for 35-40 minutes, flipping halfway for even cooking. Roasting develops caramelized edges and tender centers. Meanwhile, ricotta cheese is combined with honey, chopped fresh rosemary, and salt to create a sweet and fragrant cream that complements the beets' earthiness.
Once roasted, the beets are served warm topped with the honey ricotta and garnished with additional rosemary for aroma and visual appeal. The combination balances sweet, earthy, and herbal flavors with varied textures—a soft, creamy topping contrasting the tender roasted beets. This dish pairs well as an accompaniment to meats or as a standalone vegetarian appetizer.
