These oven roasted crispy potatoes are the perfect easy side dish to any meal! Crispy and flavorful on the outside and creamy and soft inside, they're a versatile addition to any dinner. Ingredients
- 2 pounds potatoes any kind works, I like yukon gold best, 1 inch diced
- ¼ cup olive oil
- 2 teaspoons season salt
- 1 teaspoon table salt
- 1 teaspoon black pepper
- ½ teaspoon paprika
Instructions
- Preheat oven to 450 degrees F.
- Toss potatoes with olive oil and seasoning.
- Spread potatoes in an even layer on a sheet tray that has been lined with parchment or foil.
- Cover completely with foil.
- Bake covered for 30 minutes.
- Uncover and toss the potatoes.
- Finish baking, uncovered, until soft, about 10 more minutes.

- Take time to completely dry your potato pieces — the drier the potato surface, the more effectively it will transform into a golden, crunchy exterior when roasted. Let the potatoes sit and air dry for a few extra minutes to ensure maximum moisture removal.
- About 2-3 tablespoons of olive oil per pound of potatoes will create a luxurious, crispy coating. Toss the potatoes thoroughly to ensure every piece is evenly and generously coated, which is the secret to achieving that irresistible golden exterior.
