Paleo Almond Butter Brownies
Description
These brownies use almond butter and almond meal instead of traditional flour to create a paleo-friendly dessert with a moist, soft texture. Melted coconut oil and raw honey provide sweetness and richness, while cacao powder adds chocolate depth. The batter incorporates an egg and vanilla extract to bind and flavor the ingredients before folding in chocolate chips and chopped walnuts. Baked in an 8x8 inch dish at 350 degrees Fahrenheit for about 30-35 minutes, the brownies develop a slightly crisp edge while remaining tender inside. Cooling before cutting allows them to set properly. The walnuts distributed throughout add crunch and contrast to the fudgy chocolate base.
Ingredients
- ½ cup almond butter
- ¼ cup coconut oil melted
- ¾ cup honey raw; organic
- 1 egg large
- 1 Tablespoon vanilla extract pure
- 1 cup almond meal Bob's Red Mill brand; aka almond flour
- ¼ cup cacao powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 4 oz chocolate chips Enjoy Life brand
- 4 oz walnuts chopped
Instructions
- Preheat oven to 350 F. Grease a 8 x 8 in baking dish.
- Mix together almond butter, melted coconut oil, honey, egg, vanilla extract in a bowl.
- In a separate bowl mix almond flour, cacao powder, baking soda and salt.
- Add dry ingredients to wet ingredients and mix well. Fold in the chocolate chips and chopped walnuts.
- Spread evenly in the prepared baking dish and bake at 350 F for about 30 - 35 minutes.
- Cool completely for about 15 minutes, and then cut in 16 squares.
