Paleo Apple Coffee Cake

This Paleo Apple Coffee Cake layers almond flour cake batter with a crunchy pecan and cinnamon streusel topping and chopped fresh apples. The cake has a moist, dense texture, enriched with maple syrup and coconut oil, and balanced by the tartness of lemon juice. The streusel adds a textured sweetness that complements the soft baked apple pieces woven into the cake. It offers a natural sweetness without refined sugars and a nutty depth from the almond flour and pecans, making it a satisfying treat for those following paleo guidelines or looking for a grain-free dessert or breakfast cake.

Description

The Paleo Apple Coffee Cake combines almond flour with eggs, coconut oil, and maple syrup to create a thick, slightly sticky batter rich with flavor and dense texture. Fresh apples folded into the batter introduce moisture and a tender bite amidst the crumb. The streusel uses pecans, almond flour, cinnamon, coconut sugar, and melted coconut oil, resulting in a crumbly topping that adds crunch and warming spices. Layers of cake and streusel are alternated in an 8-inch pan and baked under foil to protect the topping and ensure even baking. The lemon juice in the batter provides a subtle brightness to balance the natural sweetness of the apples and syrup.

The coffee cake can be sliced for breakfast, teatime, or dessert. It pairs well with coffee or tea and can be served slightly warm or at room temperature. Any type of crisp apple can be used depending on taste preference, influencing the tartness and texture slightly. The almond and pecan combination adds a toasted flavor that complements the fruit.

Substituting coconut sugar with brown sugar or sugar-free brown sugar is possible for the streusel. The recipe calls for a specific almond flour variety for optimal texture but can be adapted. The cake can be stored covered at room temperature or refrigerated for freshness.

Ingredients

Servings

Coffee Cake:

  • 2 egg large
  • ¼ cup coconut oil
  • ½ cup pure maple syrup or honey
  • ½ tsp lemon juice or cider vinegar
  • 2 cups almond flour Bob’s Red Mill Super Fine
  • ½ tsp baking soda
  • ¼ tsp salt sea salt
  • 1 apple peeled, cored and chopped (about 1 cup, Gala variety

Streusel Topping:

  • 2/3 cup almond flour Super Fine
  • 3/4 cup pecans chopped, raw
  • 5 Tbsp coconut oil or butter, melted
  • cup coconut sugar
  • Pinch salt sea salt
  • 1 ½ Tbsp ground cinnamon

Instructions

  1. Preheat the oven to 350 degrees F. Line an 8-inch square baking pan with parchment paper.
  2. In a mixing bowl, whisk together the eggs, melted coconut oil, pure maple syrup, and lemon juice until well-combined.
  3. Add the almond flour, baking soda, and sea salt and stir well until a thick dough forms.
  4. Stir in the chopped apple until well-incorporated.
  5. In a separate bowl, stir together all of the ingredients for the streusel topping. It will be fairly dry and crumbly - this is normal.
  6. Transfer half of the coffee cake mixture to the lined baking sheet and smooth it into an even layer. Follow this up by sprinkling half of the streusel mixture over the cake batter evenly. Repeat for the remaining cake batter and streusel mixture (it’s normal for the cake batter to be thick and sticky, so do your best to smooth the layers with a rubber spatula, but it doesn’t need to be perfect!).
  7. Cover the coffee cake with foil and bake for 30 minutes. The foil will protect the topping from burning. Remove the coffee cake from the oven and discard the foil. Place the coffee cake back in the oven and continue baking without the foil for another 15 to 20 minutes, or until the cake has set up and is golden-brown around the edges. Cakes are fully cooked and have the best texture when they reach an internal temperature between 190 and 205 degrees Fahrenheit. Insert a digital thermometer into the center of the cake to check for doneness.
  8. Allow the coffee cake to cool for at least 15 minutes before slicing and serving. The coffee cake falls apart easily if it is sliced while it is still warm, but if it slices into clean slices once fully cooled.

Notes

  • Any apple variety can be used; Granny Smith offers more tartness.
  • Coconut sugar in the streusel can be swapped for brown sugar or sugar-free brown sugar for different sweetness.
  • Use almond flour labeled super fine for the best cake texture.
