  • 2 tbsp coconut oil
  • 3 tbsp coconut sugar
  • 1 egg room temperature
  • 2 1/4 cups almond flour
  • 1/3 cup almond butter creamy
  • 1 tsp baking soda
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2/3 cup dark chocolate chips

Instructions

  1. First, preheat oven to 350 degrees and line an 8 inch by 8 inch baking pan with parchment paper.
  2. In a small microwave safe dish, melt coconut oil. Set aside.
  3. Next, in a stand mixer or KitchenAid, beat egg and coconut sugar for 1 minute. Sift in almond flour.
  4. Then, add in almond butter, baking soda, maple syrup, vanilla and melted coconut oil. Stir to combine.
  5. Once mixed, fold in chocolate chips.
  6. Pour batter into lined baking pan.
  7. Then, bake for 17 to 18 minutes or until the edges are golden and the middle is set.
  8. Finally, remove from oven and cool for 30 minutes before slicing and serving.

Notes

  • Ghee or grass-fed butter can replace coconut oil if preferred.
  • Cashew butter or sunflower butter can be used instead of almond butter.
  • Maple syrup may be substituted with honey.
  • Allow at least 30 minutes of cooling before slicing for best texture.
