Paleo Meatballs with Marinara Sauce

Paleo Meatballs with Marinara Sauce feature a blend of ground beef and pork seasoned with onion, garlic, parsley, and gluten-free breadcrumbs. Baked until browned and cooked through, the meatballs are combined with a marinara sauce enriched with sautéed onions, carrots, garlic, honey, red wine, and Italian herbs. This hearty and flavorful dish can be enjoyed over gluten-free pasta or mashed potatoes, offering a comforting and satisfying meal.

Description

Paleo Meatballs with Marinara Sauce begin by mixing ground beef and ground pork with finely chopped onion, minced garlic, egg, gluten-free breadcrumbs, salt, black pepper, and chopped parsley. Sized into about 30 meatballs, they are baked at 400°F until browned and cooked through. Meanwhile, the marinara sauce is prepared by sautéing onions and carrots in a skillet until tender. The sauce includes a base of marinara combined with honey, red wine, garlic, salt, pepper, Italian seasoning, and fresh basil, which simmers briefly to meld flavors. The cooked meatballs are added to the sauce to absorb its seasoning.

The completed dish delivers tender meatballs with a balanced seasoning that pairs well with gluten-free spaghetti, pasta, or mashed potatoes. The sauce brings sweetness from the honey and depth from the red wine and herbs, complementing the savory meatballs.

Ingredients

Servings
  • 1 lb ground beef
  • 1 lb ground pork sausage or ground pork
  • 1 onion finely chopped, medium
  • 3 cloves garlic minced
  • 1 egg
  • ½ cup breadcrumbs gluten free
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup parsley chopped

Sauce

  • 1 onion finely chopped, medium
  • 3 carrot sliced, medium
  • 16 oz marinara sauce Ragu brand
  • 1 Tablespoon honey
  • ½ cup red wine
  • 3 cloves garlic
  • salt to taste
  • black pepper to taste
  • Italian seasoning
  • 1 Tablespoon basil freshly chopped

Instructions

  1. Preheat oven to 400 F degrees. Line a baking sheet with parchment paper.
  2. Mix all the meatballs ingredients together in a large bowl. Shape the mixture into meatballs. (I ended up with about 30 meatballs.) Place all the meatballs onto the baking sheet.
  3. Bake for about 30 minutes or until meatballs are done and browned.

Sauce

  1. Saute chopped onion in a large skillet until translucent. Add to the skillet the chopped carrots and season carrots & onion with salt to taste. Cover with a lid and saute for couple minutes, until tender. Pour marinara sauce, honey and red wine over the vegetables in the skillet, and stir everything. Simmer uncovered for about 5 minutes.
  2. Add minced garlic and freshly chopped basil, and stir everything.
  3. Add meatballs to the marinara sauce and pour the sauce over them. Garnish with freshly chopped basil if you want.
  4. You can serve the Italian meatballs with marinara sauce over gluten free spaghetti, pasta or mashed potatoes. Enjoy!
