Paleo Pumpkin Chocolate Chip Cookies

These Paleo Pumpkin Chocolate Chip Cookies combine almond flour and pumpkin puree to create a moist, tender cookie studded with dark chocolate chunks. Pumpkin pie spice and pure maple syrup contribute warm autumnal flavors and natural sweetness. The cookies are baked until set but do not spread much, resulting in soft, shaped discs with a pleasing texture.

Description

Paleo Pumpkin Chocolate Chip Cookies start with mixing wet ingredients—egg, pumpkin puree, maple syrup, and vanilla extract—combined separately from the dry ingredients of almond flour, pumpkin pie spice, salt, and baking soda. After blending the two mixtures, chopped dark chocolate is folded in. The dough is portioned and baked on a prepared sheet at 350°F for 10 to 12 minutes. Because the dough has little gluten and leavening, the cookies maintain their dropped shape with a chewy texture.

The pumpkin pie spice adds warmth that complements the natural earthiness of pumpkin and almond flour, while the dark chocolate pieces provide bursts of rich bittersweet flavor. Maple syrup gives sweetness without refined sugar. The result is a moist cookie with subtle spiced notes and chocolate richness.

These cookies suit those following paleo diets or looking for a treat incorporating pumpkin and chocolate without grain-based flours. They hold shape well and can be pressed into discs after baking to refine their form.

Ingredients

Servings
  • 1 large egg
  • 1/3 cup pumpkin pureed
  • 3 Tbsp pure maple syrup
  • 1 tsp vanilla extract pure
  • 2 cups almond flour finely ground
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 tsp salt sea salt
  • 1/4 tsp baking soda
  • 1 (3-ounce) dark chocolate bar, chopped (see note

Instructions

  1. Preheat the oven to 350 degrees F. Lightly spray a large baking sheet with cooking spray (I use avocado oil spray) or line the cookie sheet with parchment paper.
  2. Add the first 4 ingredients (egg through vanilla extract) to a mixing bowl and whisk well (note: you can also use a stand mixer). In a separate bowl, stir together the next 4 ingredients (almond flour through baking soda).
  3. Pour the dry ingredients into the bowl with the wet and stir until combined. Fold in the chopped dark chocolate.
  4. Drop cookie dough onto a large baking sheet in the same shape you want the cookies (the cookies will not rise or spread while they bake. I like to bake the dough in balls and then gently press them into a disc/cookie shape once they are finished baking).
  5. Bake for 10 to 12 minutes, or until cookies reach desired level of done-ness.

Notes

  • You can use any chocolate bar or chocolate chips if you do not have a Paleo-specific chocolate bar.
