Pan Seared Pork Chops
Description
Pan Seared Pork Chops combines thicker, bone-in chops with a straightforward seasoning of salt and black pepper for a pure pork flavor. Cooking in a hot cast-iron skillet with olive oil creates a caramelized brown crust on each side. Adding butter, garlic cloves, and fresh thyme at the finish allows the meat to soak up rich, herbaceous flavors as it bastes. The method encourages a balance between a crisp outer texture and a juicy, tender center.
Once cooked, the pork chops rest for five minutes to preserve juiciness and finish any residual cooking. These chops pair well with simple sides like roasted vegetables or mashed potatoes, letting their browned, aromatic notes shine through.
Ingredients
- 4 oz/150g pork chops I prefer thicker pork chops to ensure a juicier end result, bone-in
- 2 tbsp olive oil
- 2 tsp salt
- 1 tsp black pepper
- 3 tbsp butter
- 4 garlic peeled, cloves
- 4 prigs thyme
Instructions
- Pre-heat a large cast-iron skillet over medium-high heat.
- Pat the pork chops dry with paper towels then season generously on both sides with salt and pepper.
- Once the pan is hot, pour in the olive oil then add the pork chops, pressing down with a spatula to ensure the full chop is making contact with the hot pan.
- Cook for 2-3 minutes per side, depending on thickness, until golden brown.
- Add the butter, garlic and thyme to the pan and baste the pork chops for a minute or two until done to your preference.
- Remove from the pan, pour over the butter and aromatics and allow to rest for 5 minutes then serve.
